When we include vegetables in our diets it’s for specific purposes. They add natural fiber as well as many vitamins and nutrients. The last thing you want to do is reduce the benefits of eating vegetables by cooking them the wrong way draining the amount of nutritional value they can provide.
Tips to maximize vegetable nutrition:
- Don’t cook vegetables in water. This process causes the vitamins and nutrients to seep out into the water and out of the vegetables.
- Eat or begin cooking vegetables immediately after they are cut up. Once vegetables are cut they start to lose their nutritional value.
- Vegetable skims have the most nutrients. It is best to scrub the skins with a vegetable brush before cooking them rather than peeling away the skins which is healthy and good for you.
- Don’t soak cut or peeled vegetables in water. This process speeds the reduction of nutrients from the vegetables.
