Margarita Pasta

I have been making this at home constantly. Great cold or hot, this dish takes a few simple ingredients and lets them truly shine.

Ingredients:

  • 1lb of your favorite pasta
  • 2 balls of fresh mozzarella (buffalo mozzarella is divine)
  • 1 container (pint) of grape tomatoes
  • 1 small container of fresh basil
  • 3-4 Tbsp olive oil
  • zest of 1 lemon
  • 1 Tbsp lemon juice
  • Salt and pepper to taste

Prepare pasta according to instructions on package.

Meanwhile, rip apart cheese into small pieces and halve tomatoes. Chop basil finely.

When pasta has been cooked and drained, return to pot and stir in mozzarella, tomatoes, basil and olive oil. Keep heat on low to warm all ingredients through. Add lemon zest and the juice of half the lemon (about 1 Tbsp). Allow pasta to sit on heat for several minutes, stirring occasionally. Add salt and pepper to taste, serving immediately.

Tip: This dish is absolutely wonderful with the addition of pesto chicken. Just chop up the white meat of one rotisserie chicken, toss it in 1/4 cup of pre-made pesto sauce and add to drained pasta. You're welcome.
