Mardi Gras Zesty Baked Catfish

This catfish is perfect for a Mardi Gras or any other dinner for two. This dish combines common pantry seasonings for a taste that's anything but basic.

What You Need:

(Makes: 2 servings)

1 teaspoon of canola oil

1 teaspoon of lemon juice

2 catfish fillets (6 ounces each)

1 & 1/2 teaspoons of paprika

1/2 teaspoon of dried tarragon

1/2 teaspoon of dried basil

1/2 teaspoon of pepper

1/4 teaspoon of salt

1/8 teaspoon of cayenne pepper

What to Do:

STEP 1) Combine the oil and lemon juice; brush over both sides of fillets; set aside.

STEP 2) In a small bowl combine the paprika, tarragon, basil, pepper, salt and cayenne; rub over both sides of fillets. Place in an ungreased 15x10x1 inch baking pan.

STEP 3) Bake the fish, uncovered, at 350 degrees for 10 to 15 minutes or until fish flakes easily with a fork.

STEP 4) Happy Mardi Gras & Enjoy!
