Mardi Gras at Universal Studios Florida features authentic Cajun cuisine

If you head over to Universal Orlando Resort for the Mardi Gras celebration, which runs on select weekend nights through May 31, be sure to bring your appetite. Not only can you enjoy the entertainment, including big name bands and musicians who come direct from New Orleans, and the gala parade, but you can also feast on authentic Cajun cuisine.

Click the slideshow accompanying this article to see some of the tastebud-tempting dishes, including andouille sausage, gumbo, jambalaya, and shrimp po boys. Some of the items have a mild spice, but nothing that will set your mouth on fire, so don't be afraid to be adventurous. Save room, as you can also indulge in delicious desserts like king cake (minus the tooth-breaking baby), pralines, cheesecake, and beignets.

You'll find the food in the French Quarter Courtyard, which opens in the late afternoon. Some special items will also be featured in the park's restaurants, where the chefs get creative with the Cajun theme.
