It’s Friday evening and that means it’s time to wind down and enjoy a little something extra special. Tonight’s cocktail feature is Mango Cocktail. Summery mango puree is mixed with vodka and Cointreau and hinted with lime juice to create a tangy, seasonal drink. If you cannot locate mango puree in the supermarket, peel two small fresh mangos. Slice them and place in a blender with ¼ cup of water and blend until smooth. Remember to sip safely. Healthy and joyous weekend wishes!
Mango Cocktail (Recipe feature Colin Cowie via O, The Oprah Magazine)
- ¾ cup(s) vodka (preferably Grey Goose)
- 1/3 cup(s) Cointreau
- 2 cup(s) mango puree
- ¼ cup(s) lime juice
- Fresh mango wedges, for garnish
In a large glass pitcher, combine all ingredients; refrigerate until cold. Serve chilled, in cocktail glasses, garnished with fresh mango wedges. Serving yield = six servings.
