The cost is down to the Wagyu beef that makes up most of the filling. The other ingredients include fresh lobe foie gras, black truffle mayonnaise, brie de meaux, rocket, red pepper and mustard confit, and English plum tomatoes. But on a neighborhood budget here, in Sacramento, you can make your own mayonnaise (substitute) by pureeing soaked flax seeds and adding a little lemon juice or apple cider vinegar to taste. Lemon juice, although tart, actually is alkaline once it gets into your stomach. Basically, to make your own healthy mayonnaise you soak 1/4 cup of flax seeds in 1/2 cup of water for at least three hours.
Then you add a tablespoon of organic apple cider vinegar. Next you put the soaked flax seeds and the vinegar into a blender and add up to one cup of extra virgin olive oil or grape seed oil. Add your favorite spices. Some people like a pinch of chili powder added to mayonnaise. Others prefer herbs such as dill or finely chopped greens such as chives or cilantro. You can use any oil of your choice such as rice bran oil, walnut oil, avocado oil, or Macademia nut oil.
Or you can mix several oils, olive, grape seed, and macadamia nut oil, for example, using small but equal amounts of various oils that you select for their health benefits. If you're not salt-sensitive (or a family member is not salt-sensitive) you can season with a pinch of sea salt, but not more than a quarter teaspoon of sea salt. Or use another spice to substitute for salt, such as cinnamon, cloves, or herbs such as a small slice of garlic and onion. Don't use garlic and onion if you're using salt.
Then liquefy everything except the oil and vinegar in a blender so that the flax seeds produce a creamy, mayonnaise-looking paste. While the blender is on low so it doesn't splash out of the top, drizzle in the vinegar and some of the oil a little at a time. You don't have to use the entire cup of oil.
As you add the oil, look for the consistency of mayonnaise as the paste thickens. You'll get a little more than a cup of mayonnaise. If you don't want to use olive oil, use grape seed oil instead. Never use distilled white vinegar.
Just use organic apple cider vinegar. This will save money when making your own sandwich spread or salad dressing because buying a large bottle of grape seed oil mayonnaise in some supermarkets can cost upwards of $9 for a large jar. By making your own at home, you can use this type of vegan sandwich or wrap spread for most kid's lunches to take to school.
Keep the spread stored in the refrigerator, on ice, or in some type of cooler made for carrying sandwiches. Home-made mayonnaise doesn't last for weeks like the mayonnaise you buy in jars from the food market. It spoils quickly. So keep it refrigerated. Sandwich fillings can be vegan or any type you prefer with the home-made mayonnaise substitute.
