Do you love eating granola bars for breakfast? Have you ever tried to make them at home? Believe it or not, they are extremely easy to make and you can basically use the same recipe to make any flavor you can imagine.
By making them at home, you know exactly what goes into them and can easlily taylor them to your family’s preferences.
Since cranberry and orange are a great combination this time of year and the flavors of chocolate and orange are classic together, combining the three into one bar is a delicious idea.
These are completely customizable because you can use any fruits, nuts and addition ingredients that you like.
Don’t worry about the chocolate chips melting slightly in the warm oatmeal mixture. Anything that melts will just help “glue” the bars together.
These are a healthy snack to keep around for breakfast or anytime snacking. Store in an airtight container at room temperature for about one week or freeze them.
Cranberry, Orange and Chocolate Granola Bars
Makes 12 bars
- 2 1/2 cups rolled oats
- 1/2 cup coarsely chopped pecans ( or desired nuts)
- 1/4 cup butter
- 1/4 cup honey
- 1/3 cup packed dark brown sugar
- 1 teaspoon vanilla
- 1/3 cup cranberries
- 1/4 cup plus 1 tablespoon mini chocolate chips
- 1/2 teaspoon finely grated orange zest
Preheat oven to 325.
Line a 9 inch square pan with foil. Lightly spray with cooking spray.
Spread oats and nuts in a single layer on a baking sheet. Bake 5 minutes; stir and bake another 5 or minutes until lightly toasted and fragrant. Transfer to a large bowl.
In a saucepan, combine butter, honey and brown sugar. Cook over medium heat, stirring occasionally until butter melts and the sugar completely dissolves and mixture is slightly bubbly. Remove from heat and add vanilla.
Pour butter mixture over oats and nuts. Let cool for about 5 minutes. Add cranberries, orange zest and a 1/4 cup of the mini chocolate chips. Stir to combine.
Press mixture into prepared pan using a silicone spatula or slightly damp fingers. Press hard for a few minutes so that bars will stay together when cut.
Cover and chill for at least an hour. Turn onto a cutting board and cut into bars.
