Make's rosemary Champagne fizz recipe for a memorable toast

Out of the hubbub, a fork tinkles politely against a Champagne glass, and the room falls silent. A toast is made, and everyone takes a sip of their drink. It's probably true that most of the time, people remember the toast better than what was in their glass. Well, here's a recipe that might just change that.

For the rosemary simple syrup:

  • ½ c granulated white sugar
  • ½ c water
  • 1 small bunch + 4 sprigs rosemary

For the Champagne fizz:

  • 1 T rosemary simple syrup, or to taste
  • 3 oz gin
  • 3 oz freshly squeezed ruby red grapefruit juice
  • Champagne or prosecco, as needed


For the rosemary simple syrup:

1. In a small saucepan, combine the sugar, water, and 1 bunch rosemary, and bring to a boil, stirring until the sugar is dissolved. Remove from the heat and let cool.

For the Champagne fizz:

1. In a cocktail shaker or mixing glass, combine the rosemary simple syrup, gin, and grapefruit juice and stir.

2. Pour into 2 cocktail glasses. Top each with champagne and garnish with a sprig of rosemary.

Serves: 2

Editor's note: Use leftover simple syrup to flavor soda, iced tea, and other drinks.
