Make ahead breakfast pizza recipe for hectic school mornings

Providing a good hot breakfast for school mornings may seem like an impossible task. This is particularly so if you have children who are not overly fond of breakfast foods. One of the ways to solve this problem is to think beyond standard breakfasts foods such as eggs or oatmeal. Try giving your children foods you know they like presented in a new way.

What child does not like pizza? There may be a few that do not like it, but chances are your child is not amongst those few. But pizza for breakfast? That sounds too complicated.

However, it is not complicated if you plan ahead and have them ready to heat up in the microwave, toaster over, or even your regular oven. It is actually very simple. Your children can even help make them. You can use the customary pizza toppings such as Italian sausage, pepperoni, and mozzarella or you can change it up and use breakfast sausage, mild cheddar, Canadian bacon, and vegetables. Better yet, let your children decide what toppings they would like.

Breakfast Pizza

Ingredients

  • 1 whole wheat or other whole grain English muffin or small bagel per serving
  • 1 jar of pizza sauce or your own homemade pizza sauce
  • assorted toppings such as mushrooms, bell pepper, cheeses, cooked chicken, cooked ground beef or sausage, pepperoni, or anything else that you know your child will like.

Directions:

Preheat oven to 350 degrees. Cover the work surface with waxed paper. Split English muffins or slice open bagels. Which the help of the children, spread some sauce on each muffin or bagel. Add some cheese, then toppings, then a bit more cheese. Bake in oven for 5 to 10 minutes or until cheese is melted.

Allow to cool and pack individual pizzas into freeze bags for best retention of flavor. Store in refrigerator or freeze, but refrigerator is best. If frozen, they need to thaw for a day before reheating.

To reheat refrigerated pizzas, microwave for about 1 minute on a microwaveable dish, or place under a oven or toaster oven broiler for about two minutes or until cheese is melted.  Remember to turn your stove or toaster oven off before leaving.

This may not be the ideal nutritious breakfast, but if you use good ingredients, it will come close. Do not forget to offer a glass of milk and perhaps some fruit. The pizza is something your child can carry in-hand and eat on the way to school if necessary.

You can find a good selection of Ingredients in Long Beach grocery stores, but do not overlook the vast variety of ingredients available in the local farmer's markets. The farmer's markets often have artisan cheeses and good breads to make this dish even more appealing.
