If you had to list your favorite comfort foods, macaroni and cheese would be near or at the top of the list. It’s a throwback to your childhood, and eating it soothes the soul and aligns the stars – the world becomes a better place, if just for a minute (or at least through the second helping!) Mac and cheese is the perfect answer to “What’s for dinner?”
If you’ve never had homemade macaroni and cheese, you don’t know what you’re missing. This recipe makes such a creamy, delicious cheese sauce that you’ll want to eat it with a spoon – but save it for the macaroni, as the two ingredients together are fabulous. Now for the crowning glory, it is topped with a scrumptious garlicky bread-crumb crust. Macaroni and cheese just grew up!
If you don’t want to use two different kinds of cheese, you can use just cheddar. Just make sure that whatever you do, you use three cups of shredded cheese. (To shake it up a little, throw a little pepperjack in with the other types of cheeses!)
The Best Macaroni and Cheese Recipe
Ingredients for the Best Macaroni and Cheese:
- Approximately 6 – 7 cups cooked cavattappi (you can use macaroni, but cavattappi has spirals that hold the sauce better)
- 6 tablespoons butter
- 6 tablespoons flour
- 4 cups milk
- 2 tsp. salt
- 1 tsp. pepper
- ½ tsp. nutmeg
- 2 cups cheddar cheese, shredded
- 1 cup Swiss cheese, shredded
- 2 cups fresh bread crumbs (make this by rubbing fresh bread over a cheese grater)
- 3 tablespoons melted butter mixed with 1 tsp. garlic powder
Directions for making the Best Macaroni and Cheese:
Preheat the oven to 400 degrees. Butter the insides of a large shallow baking dish (a 9 x 13 or a bit larger works well).
In a large pot, cook your pasta according to the package directions, EXCEPT cook for 2 minutes less than directed. Drain well.
While the pasta is draining, using the same pot, melt the butter, whisk in the flour and cook for 1 – 2 minutes stirring constantly. Pour in the milk, salt, pepper, and nutmeg, and stir until thickened. Stir in the cheese all at once and continue stirring until melted – about 30 – 60 seconds. Remove from heat. Stir in the pasta and the mixture into the prepared baking dish. Top with the bread crumbs, and drizzle with the melted garlic butter. Bake in a preheated 400 degree oven for 20 minutes. Serve.
