The lore is that witches should never pick berries after Mabon. The equinox this year is September 22nd, so that leaves us all less than a month to pick all of those delicious blackberries, blueberries, huckleberries and other local harvests. Here's my top secret Mabon Crisp recipe for you to share.
For the Berries:
6 cups berries harvested before Mabon
4 Tbsp. brown sugar
4 Tbsp. flour or gluten free alternative
• Mix all the ingredients together thoroughly and spread evenly into a 2-quart casserole dish. Set aside.
For the Topping:
1 cup flour or gluten free alternative
1/2 cup rolled oats
1 cup brown sugar
1/2 tsp. cinnamon
2 Tbsp. orange juice
2 Tbsp. margarine (optional)
Mix dry ingredients and add orange juice and melted margarine, stirring until the mixture rolls into pea sized balls. Spread evenly over the berries. Bake at 400°F for 35 to 45 minutes, until bubbly.
