LYFE Kitchen Restaurant, the fast-growing lifestyle brand, is adding new owner-operators to its roster of LYFERS: Rachel and DJ Mitchell - who are joining the LYFE Kitchen family to operate restaurants in Colorado - will be bringing the message of “Eat Good. Feel Good. Do Good” to the Denver-area early this summer.
Rachel and DJ Mitchell both have backgrounds in the restaurant industry, as a family involved in the industry in various capacities throughout the greater Denver-area. Their passion around joining LYFE Kitchen came from a visit to the LYFE Kitchen restaurant in Palo Alto, Calif. just over a year ago. What started out as professional curiosity about the LYFE Kitchen concept of great-tasting, good-for-you food, sustainably sourced and carefully prepared, soon evolved into a new venture and the chance to start their own legacy.
“From the first bite of food we tasted, everything changed,” said Rachel. “We knew that we had to be a part of the LYFE Kitchen story. Every time we discovered something new about LYFE Kitchen, the more we were intrigued.”
LYFE Kitchen was started by hospitality industry veterans Mike Roberts and Mike Donahue in Chicago, Ill. Their passion around locally sourced food that is good for you and tastes delicious can be seen throughout the LYFE Kitchen model, from the herb wall in the restaurants’ entry way to the menu items which are all 600 calories or less. Roberts and Donahue brought in Chef Art Smith as executive chef, Chef Tal Ronnen to support the restaurant’s efforts to build an array of vegan menu options, and Chef Jeremy Bringardner as executive chef overseeing the kitchen teams.
“We couldn’t ask for two better representatives of the LYFE Kitchen brand than Rachel and DJ,” said Mike Roberts, co-founder and CEO of LYFE Kitchen Restaurant. “I know they take pride in working alongside their employees and serving customers every day. Denver represents the second franchise market for LYFE Kitchen restaurant. The company has three award-winning company-owned restaurants already in operation in Palo Alto, Culver City Calif., and Tarzana, Calif. The first franchise-owned and operated restaurant opened at Clark and Hubbard Streets in Chicago’s River North section in mid-November.
The Mitchell’s will be opening their first LYFE Kitchen location this summer at Park Meadows Mall located at 8401 Park Meadows Center Drive, Suite 2805, Lone Tree, Colo.
