LYFE Kitchen opens this Friday inside of Park Meadows mall. All menu items at LYFE are less than 600 calories and 1,000 mg sodium. Vegan and gluten-free options are clearly marked on the menu allowing for diners with any diet restriction to find an enjoyable option quickly. LYFE strives to make sure you Love Your Food Everyday, no matter what diet you choose!
Most ingredients at LYFE are sourced as locally as possible including the arugula, kale, romaine, and spinach in the Farmer’s Market Salad, Antipasto Salad, and the Kale Caesar Salad. (Grilled chicken breast, Gardein Chick’n, marinated tofu, or grilled salmon can be added to any salad, if you’re looking for a heavier option.)
Opening daily for breakfast, you can begin your day with egg and veggie filled breakfast burritos, turkey sausage sandwiches, quinoa buttermilk pancakes, yogurt, oatmeal, and muffins.
The lunch and dinner menu has appetizers like edamame hummus, grilled artichokes, and even “unfried” buffalo chicken strips. Soups include vegan sweet corn chowder thickened with cashew cream.
Sandwiches like the pizzadillawich, a folded pizza stuffed with peppers, onions, eggplant, and goat cheese mozzarella, or quinoa crunch wrap a wheat tortilla filled with quinoa tabbouleh, crunchy vegetables, edamame hummus and hot sauce. If you’re in the mood for something a with more meat, the 100% grass-fed burger should do the trick.
End your day with one of six dinner entrée options like grass-fed steak and roasted Yukon potatoes, or the chicken, mushroom, and spinach penne pasta.
Quench your thirst with a LYFE Water, smoothies, or fresh squeezed juices. With like cucumber mint, hibiscus beet, and kale-banana you can find a mixture of both sweet and not-overly sweet.
LYFE Kitchen was started by hospitality industry veterans Mike Roberts and Mike Donahue in Chicago, Ill. Their passion around locally sourced food that is good for you and tastes delicious can be seen throughout the LYFE Kitchen model, from the herb wall in the restaurants’ entry way to the menu items which are all 600 calories or less. Roberts and Donahue brought in Chef Art Smith as executive chef, Chef Tal Ronnen to support the restaurant’s efforts to build an array of vegan menu options, and Chef Jeremy Bringardner as executive chef overseeing the kitchen teams.
