This summer, I ran some recipes for homemade lemonade. Your response was phenomenal and I appreciate it tremendously! It's true that during these hot months, nothing is quite as refreshing as a glass of lemonade. In case you missed those recipes for lemonade, you still can get them by following the link below. Let's take the taste of lemonade and put it into a luscious dessert! This recipe, "Lemonade Cake", is an easy-to-do recipe since it starts with a cake mix. It's a great recipe to make when you need a cake in short order and you're likely to have the ingredients on hand.

This a very moist, dense cake that gets additional lemonade flavor from the glaze that's baked on the cake. This cake has an innovative glaze that uses a can of lemonade concentrate combined with confectioner's sugar. This saves time, since you don't have to bother with making frosting and stacking layers. Notice that once the cake is baked, the glaze is poured over it and baked for an additional five minutes. When I first tried this cake, I found this to be rather unusual, but I followed the recipe as directed. I found that this five minutes of baking allows the glaze to be further absorbed by the cake and sets the glaze on top, so be sure to follow this step.

  • 1 Pkg. Lemon Cake Mix
  • 1 Pkg. Instant Lemon Pudding (4-serving size)
  • 4 Large Eggs
  • 1 Cup Plus 2 Tbls. Water
  • 1 Stick Butter, melted

Combine all ingredients in a large bowl and beat with electric mixer until mixture is smooth and combined, about 2-3 minutes; turn into a greased and floured 9x13 inch pan and bake at 350 degrees for 35 minutes or until cake tests done; while baking, prepare the glaze (recipe below); as soon as the cake is removed from the oven, cut the cake into squares and pour the glaze over all; return to the oven and bake an additional 5 minutes; remove from oven and cool.

Lemonade Glaze:

  • 1 (1 lb) Pkg. Confectioner's Sugar
  • 1 Small Can Frozen Lemonade, thawed

Sift the sugar into the lemonade concentrate and mix well.
