To all of you out there who enjoy a nice robust sandwich in the middle of the day, with a side of chips and veggies of course, then this is the bagel sandwich for you.
Only recently discovered by yours truly, my first bite sent me into bagel sandwich paradise.
To begin, toast a bagel (anything but the fruit flavored or sugar loaded ones) until it's nice and crispy, a deep golden brown.
Once toasted, layer one slice with hard salami, arugula, and shredded cheese of your choice(Suggested: Mozzarella, Provolone, and/or a sharp Cheddar).
Set off the to side.
The arugula adds great texture to the sandwich along with a refreshing almost mint-like taste. It works wonders with the soft saltiness of the cheese, and fat from the hard salami.
Fry one egg, sunny side up. Cook almost completely, and them place it on top of the layered bagel slice.
Finish off in the microwave for a total of 30 seconds, 5-10 second increments. Keep an eye on your egg. We don't want it to explode.
The microwave finishes the cooking on the top of the egg, while simultaneously melts all of our delicious cheese.
Remove form the oven, complete the sandwich by adding the top slice, and cut in half.
Enjoy with chips, veggies and hummus, or an apple.
