
Chicken Enchiladas credit: Fiona Haynes
In honor of Cinco de Mayo, this week's recipe is a tasty low fat chicken enchilada. This low fat version is possible by using skinless, white meat chicken, plain low fat yogurt, reduced fat shredded Jack cheese, and reduced fat sour cream along with tortillas, black beans, salsa and corn.
The dish is fast and easy to make. Preparation time is only 10 minutes and the cook time is 30 minutes. The recipe serves 4.
