ZUCCHINI AU GRATIN
3 lbs zucchini or other squash, unpeeled, cut into 1/2" slices
2 cups chopped onion
1 tbsp each olive oil and unsalted butter
2 eggs and 2 egg whites, slightly beaten
1 cup shredded low-fat sharp cheddar or favorite cheese
1/2 c Panko or other crumbs, opt
Seasonings to taste (plus dash each black and red pepper)
Preheat oven to about 375 degrees.
Simmer zucchini slices until half cooked; drain. In a heavy saucepot/skillet saute onions in olive oil and butter ( or either) until softened.
Layer zucchini in flat casserole dish, spread onions over top.
In a small bowl, mix eggs, cheese and seasonings; spread over zucchini; sprinkle with crumbs, optional.
Bake 30 minutes. Serves 8.
