If you live in Tennessee, there's no excuse for opening a can of Campbell's tomato soup --ever. Making your own homemade tomato soup is as easy as pie, and even easier with a handy-dandy slow cooker, though you can always make it on the stovetop if you really insist.
Tomatoes only have about 25 calories per big serving, plus they're nutritional superstars, loaded with vitamin C, the antioxidant cancer-fighting phytochemical lycopene, and even calcium. Bet you didn't know tomatoes had calcium, did you?
Suitable for vegetarians and vegans, this zesty soup will also please the heat-lovers. Add even more heat by using hot chili peppers, or reduce the heat by using a milder pepper (or even a lightweight canned version if you must).
If you absolutely have no other option, you can substitute canned crushed tomatoes in this recipe and it will still put the high-sodium, tinny-tasting canned soups to shame, but to reap the best-tasting soup possible, choose fresh, ripe, juicy tomatoes from your local produce market or garden.
Spicy Tomato Soup with Tortilla Strips Recipe
Ingredients:
- 4 cups chopped fresh tomatoes
- 1 1/4 cups vegetable broth
- 1 medium red onion, chopped fine
- 2 cloves garlic, minced
- 1 jalapeno pepper, seeded and minced
- 6 corn tortillas, cut into strips (use kitchen shears for extra ease)
Directions: Combine first five ingredients in the crock of your slow cooker and cook on low 7-8 hours or high 3-4 hours. Spray tortillas with non-stick spray and broil 3-4 minutes until crisp. Serve soup in bowls with tortilla strips on top. Serves 6.
Optional toppings (use as many as you choose): light sour cream, shredded reduced-fat Monterey Jack or hot pepper cheese, chopped black olives, avocado slices, shredded chicken.
Serve your spicy tomato soup as a starter for a Tex-Mex fiesta, or on its own with salad and corn on the cob. Isn't it great living in the south?
