How tough is it?
The culinary team has one hour to create an appetizer, entrée and dessert. They have no electricity or battery operated equipment; they can only use two butane burners. They must bring everything with them. This is a serious competition where the students are judged on knife skills along with proper food safety, sanitation, cooking methods, food taste, team work and menu difficulty.
The management team must design a restaurant concept which includes restaurant type, design, menu and marketing decisions. Students will present a PowerPoint presentation on their concept to a panel of judges. For the second part, students will present a visual display of their restaurant concept and answer critical thinking questions from judges.
