These beers tend to have a toasty richness to them and bitter taste should not be part of the flavor profile. When you drink a wood aged beer you will find that the brewer will usually use a oak or another similar low to moderate wood to blend with the beer. You may even find flavors such as caramel, toffee, cocoa or other unique flavors because of the aging of the beer. These beers started from the region in Bavaria in Germany using a beech wood-smoked malt to start to make these beer. They made their way to America to craft breweries who were looking for a unique and modern taste.

Some good examples of these beers are Lost Abbey Angel's Share Beer, Firestone Walker Double Barrel Ale and Oaked Arrogant Bastard Ale. If you go to your local brewer you will find out that there are a number of microbreweries that have these beers that are sometimes seasonal and other served straight out of the cask that it was aged in. So if you are looking for a new beer to try this should make the list.
