What's not to love about macaroons? They're soft, sweet, decadent, and loaded with delicious coconut. And as we all know by now, coconut is one of the most nutritionally dense, health and beauty-boosting foods in the world. For the co-owner of local New York company Emmy's Organics, knowing where those coconuts come from is top priority.
Emmy's Organics, an Ithaca, NY-based company that produces gluten-free, vegan, raw, organic treats uses coconut in several of their products. To learn more about where Emmy's coconuts "grow up," co-owner Samantha Abrams took a trip to Sri Lanka to learn first-hand about her company's environmental footprint.
"It has always been a dream of mine to visit the source of our ingredients, particularly where our coconut comes from. Though we use many ingredients that don't grow in the US, we're still very sustainably-minded and do a lot of research on all of our ingredients before we purchase them," explained Abrams. "It has always been important to me to have an understanding of where our ingredients come from and how they are processed."
Abrams added that visiting Sri Lanka was a way to build a true connection with their supplier and to see the impact of sustainable ingredient sourcing firsthand.
Abrams explored the coconut plantation and processing factory that Emmy's Organics uses, learning that the organic farm utilized every part of the coconut tree, down to using coconut husks as fertilizer.
Aside from becoming knowledgeable of the utilization and care of produce, Abrams sought to learn more about the treatment of the community and the supplier's employees. Emmy's Organics has a B-Corporation Certification, indicating the the company puts itself through rigorous standards to uphold health initiatives for employees and makes sure to use eco-friendly materials in renovations.
While the brand is committed to producing clean, healthy food, Emmy's equal priority and obligation is to the planet, strictly using recycle-able materials for packaging, recycling and composting in their headquarters--- all the way to buying second-hand furniture and equipment for their office and facility.
Now, to the products. Emmy's specializes in macaroons but has just released a "super cereal" this past month. The organic Cacao Coconut Super Cereal is gluten-free, vegan, raw, non-gmo, contains fiber, protein, live enzymes, antioxidants, and healthy fats. It makes the perfect topping for yogurt, waffles, as a snack, or in a bowl of cold milk.
Emmy's chocolate sauce is incredibly rich, indulgent, and delicious. It's only made with four ingredients, including cacao (a powerhouse antioxidant), Himalayan crystal salt (the purest, healthiest form of salt in the world), and raw agave (a great low-glycemic alternative to sugar).
As for those macaroons, the variety is endless, from chai spice to chocolate orange, each flavor is exquisite, pure, indulgent, and satisfying. Browse the entire available collections at emmysorganics.com.
