Quick and healthy meals don’t have to be tasteless and boring. You certainly don’t have to spend endless hours in the kitchen to create a meal that even the little ones will love.
Treat the family to an easy pasta dinner that is full if color, texture and flavor. Start with premade, refrigerated ravioli and then embellish it with grape tomatoes, baby spinach, presh Parmesan and other fresh ingredients.
For even more color, consider using both red and yellow grape tomatoes. They both can be found at Reasor’s and other area grocery stores.
Tortellini with Baby Spinach, Grape Tomatoes and Parmesan
- 1 (9 oz.) package fresh cheese tortellini
- 2 tablespoons olive oil
- 1/2 cup finely chopped onion
- 2 cloves garlic, minced
- 1/4 teaspoon crushed red pepper flakes
- 1/2 cup chicken broth
- 2 cups grape tomatoes
- 1 (6oz.) bag baby spinach
- 1/2 cup freshly grated Parmesan, plus more for garnish
- Salt and pepper to taste
Directions
Prepare the tortellini according to package directions, being sure to add a good hefty pinch of salt to the water after it comes to a boil. Drain.
In a large skillet, heat olive oil over medium-high heat. Add onion; sauté until translucent. Add red pepper flakes and garlic and sauté for about 30 seconds or until garlic is fragrant, taking care not to burn it.
Add chicken broth to skillet and bring to a simmer. Add tomatoes and spinach. Cook just until spinach wilts. Add tortellini back to skillet and add Parmesan. Season with salt and pepper; toss to coat.
Garnish individual servings with more cheese, if desired.
