When I was a young girl, my dad and I used to have a special tradition. A few times a year we'd buy a pomegranate, sit at the kitchen table and make a project of peeling away the layer of thick red skin and segmenting the fruit without getting it all over us. Just the two of us shared the love of the fruit, and we'd enjoy every little juicy, crunchy seed (aril).
That was before pomegranates became mainstream and all the rage. It was also before we knew about their tremendous health benefits from antioxidants. We just knew one thing: we loved them!
Today, pomegranates are available in many forms: Whole fresh fruit and Pom Poms Fresh Arils, juice and juice blends, pills, shots, liquids and concentrates. POM Wonderful offers many convenient and easy ways to enjoy the healthy and delicious fruit that has been around for over 4,000 years.
Recently I tried POM Wonderful 100% Pomegranate Juice and POM Blueberry Juice. I splashed an ounce or two in my seltzer. I added some to my plain, filtered water for a little bit of pizzazz. I made a bright and tangy vinaigrette by substituting some POM Pomegranate juice for some of the acid in the typical 3:1 oil to acid ratio. It made my spinach salads pop and was interesting drizzled over chilled roasted broccoli.

POMojito
Ingredients:
1 oz. POM Cherry 100% juice
1 1/2 oz. light rum
1/2 oz. fresh lime juice
3/4 oz. simple syrup (equal parts sugar and cold water dissolved together)
Soda
4 mint leaves
Mint sprig for garnish
Preparation:
In the bottom of a double old-fashioned glass bruise the 4 mint leaves with the fresh lime juice and simple syrup.
Add crushed ice then the POM Cherry and rum. Top with a splash of soda and stir. Garnish with the mint sprig.
