Lightened-Up Dark Chocolate Chip Skillet Cookie

Sometimes, you just need a giant, gooey cookie--and fast. But making traditional cookies involves a lot of dishes, and sometimes you're just not in the mood for a major cleanup afterwards.

This quick and easy skillet cookie recipe is entirely mixed and baked in the same skillet, allowing for easy cleanup.

The added bonus? This recipe (adapted from Lemon Sugar) has been lightened up to be a little bit healthier and lower calorie, so you can enjoy it without feeling weighed down afterwards. You know what that means, right? Dessert every day!


  • 4 tablespoons butter or margarine
  • 4 tablespoons Vanilla greek yogurt
  • 1/2 cup Stevia in the Raw
  • 1/2 cup light brown sugar
  • 1 egg, beaten
  • 1 cup whole wheat flour
  • 1/2 cup whole grain quick oats
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1 tsp vanilla extract
  • scant 1 cup dark chocolate chips


Preheat oven to 350 degrees Fahrenheit.

Melt butter and yogurt together over medium heat in a medium skillet (cast iron is preferred, but not required).

Once melted, remove from heat and stir in both sugars until well combined. Allow to cool for about 5 minutes.

Crack egg into a bowl and beat together with a spoonful of the sugar mixture (to temper). Pour the egg mixture into the skillet and stir together.

Add in the flour, oats, baking soda, and salt. Stir carefully to incorporate ingredients (it will be pretty gooey at this stage, but don't worry).

Wait another minute or to, to let cookie cool slightly. Then stir in vanilla extract and chocolate chips, carefully.

Spread dough to fill the skillet and smooth it out. Insert into preheated oven and bake for about 15-20 minutes, until edges are golden brown.

Pull it out (carefully), allow to cool slightly, and dig in while it's still warm and gooey!
