As the temperature rises, people venture out of hibernation in search of sustenance and sunshine. One snack proves refreshingly addictive and versatile: ceviche! No matter where you live, it is possible to bring the beach home with this recipe. There is something alluring about a crisp, cold beer or margarita, salty tortilla chips, and savory ceviche to dip into on a warm day. It is also an incredibly simple and quick snack to create. Customize your ceviche with some diced pineapple or mango to sweeten it up, some corn and green chili, or use your favorite fish instead of shrimp. The recipe below is California-style ceviche that is bursting with avocado!

Ingredients
• 2 cups fish of choice, diced (shrimp, crab, mahi mahi, ahi tuna, scallops, or lobster are all delicious)
• 1 avocado, diced
• ½ cup lime juice
• ½ cup diced tomatoes
• 1 jalapeno, de-seeded and finely chopped
• ½ cup diced cucumber
• 1/8 cup diced red onion
• 1-2 green onions sliced finely
• Salt and pepper to taste

Directions

1. After your fish of choice is chopped, marinate in the lime juice for at least 30 minutes – you may discard the lime juice after marinating.
2. In a large bowl, mix all ingredients and add salt and pepper to taste

Enjoy with tortilla chips or on top of cucumber slices for a low carb snack that satisfies your coastal cuisine cravings.
