While it may seem hard to find a decent scotch drink in the craft-beer-heavy Denver, settle in, celebrate the special oak-barrel aged whisky that we know as scotch, and take a sip at one of these scotch-authorities:
License No. 1 (2115 13th Street, Boulderado Hotel - www.license1boulderado.com): Head downstairs, ring the doorbell at the back door of the Hotel Boulderado’s distilled spirits-focused bar and enjoy a classic Blood and Sand. License No. 1’s version offers Dewars Blended Scotch, Carpano Antica sweet vermouth, cherry heering and fresh orange juice. Not in the mood for a cocktail? Serious Scotch drinkers know to check in with the knowledgeable LNO bartenders - the bar back features 15 Scottish whiskeys on hand, ranging from Talisker 10yr or Storm (Highlands) to Laphroig 10 or Quarter Cask (Islay). If your sweet tooth has a hankering, ask for an off-menu scotch and chocolate pairing - the Flourless Chocolate Cake, the Raspberry Red Velvet Torte, and the House Made Truffles with all have specially-paired whiskey choices.
Humboldt (1700 Humboldt Street - www.humboldtrestaurant.com) offers their own east-coast seaside inspired version of the Blood & Sand. In their iteration, the Rudolph Valentino-inspired cocktail starts with Famous Grouse Scotch with Carpano Antica Sweet Vermouth, cherry heering and a muddled orange in place of the orange juice, offering a fresh, citric note to the cocktail classic.
As always, both restaurants will showcase food from their menus. License No. 1 offers small plates like Caramelized Brussel Sprouts, Ginger Shrimp Skewers, or a Maine Lobster Roll.
Humboldt's Raw Oysters, Smoked Trout Dip, and their Cheese and Meat Board always make a nice addition to a scotch drink.
