Lemon Thyme Chicken is a versatile, easy dish that's a perfect showcase for thyme. While the herb likes to be put in nearly any dish you can imagine, it pairs exceptionally well with chicken and lemons. Lemon Thyme Chicken is elegant enough to be used for a dinner party, or holiday dinner, but it's easy enough to be used in a busy weeknight meal. Even the cooking method is versatile. Throw it in the slow cooker early in the day for a ready meal later, or put it in the oven a couple of hours before you want to eat.
Lemon Thyme Chicken
- 3 chicken breasts or 6 chicken thighs, boneless and skinless *
- Juice of 2 large lemons
- 3 fresh sprigs of thyme, or 1 Tbsp dried
- 2 garlic cloves, minced
- 5-6 mushrooms, sliced (optional)
- salt to taste
Slow Cooker Method: Place all ingredients, in order listed, in the slow cooker. Set to high for 5-6 hours or low for 8-10 hours.
Oven Method: Place all ingredients, in order listed, in a 9x13 casserole dish. Cover. Cook at 350 for 1.5-2 hours, or until internal temp reaches at least 165 degrees Fahrenheit.
* Use whatever cut is on sale. Thighs are a little moister.
Since this dish is gluten free, dairy free, paleo friendly and all around allergen friendly, it's a great dish for a potluck of any kind. Pair it with a veggie side dish and salad, or rice pilaf, for a satisfying meal.
