Lemon poppy seed donuts

These simple baked donuts are a perfect way to start the day.

Ingredients
2 ¾ cup flour
1 tsp. baking powder
½ tsp. baking soda
½ tsp. salt
3 tbsp. poppy seeds
¼ cup unsalted butter, melted
¼ cup canola oil
¾ cup 2 tbsp. sugar
1 tbsp. lemon zest
2 eggs
¾ cup 2 tbsp. buttermilk
2 tbsp. lemon juice

Glaze Ingredients
1 ¾ cup powdered sugar
3 ½ tbsp. lemon juice

Instructions
Preheat oven to 375º and grease a donut tin. Lightly dust the tin with flour. In a bowl, combine flour, baking powder, baking soda, salt, and 2 tbsp. poppy seeds. In another bowl, whisk together the butter, oil, sugar, and lemon zest. Whisk in the eggs. In a third bowl, quickly whisk together the lemon juice and buttermilk – quick whisking will prevent curdling. Add 1/3 of the flour mixture to the butter mixture. Add in ½ of the buttermilk mixture. Add in another ½ of the flour mixture and so on until all of the ingredients are completely combined.

Spoon the dough into the greased donut tin. Leave 1/3 inch at the top of each to allow for rising. Bake about 8 minutes, or until a toothpick comes out clean. While cooling on a wire rack, prep your glaze. Whisk together the ingredients, then dip the tops of the cooled donuts in. Sprinkle the remaining poppy seeds over the wet glaze and let set for several minutes. Serve and enjoy!
