This is a delicious and quick lemon bar recipe to serve to unexpected guests.

Lemon Oatmeal Bars

1 cup butter

1 cup granulated sugar

2 cups all-purpose flour

1 1/4 cups oatmeal either quick or old-fashioned oatmeal

Juice of 3 lemons

Zest of 2 lemons, finely chopped (be sure it contains no white pith)

Zest of 1 orange, finely chopped (be sure it contains no white pith)

1 (14 ounce) can sweetened condensed milk


Heat oven to 350 degrees F.
  • Butter or spray a 9 x 13-inch baking pan.

  • Cream butter and sugar, then add the flour and oatmeal to make the dough (it will be a little crumbly).
  • Set aside.

  • Stir juice and zest into the sweetened condensed milk.
  • Set aside.

  • Press 2/3 of dough into prepared pan.
  • Spread the lemon/milk mixture evenly over the top of the dough.
  • Sprinkle the remaining dough over the top, press down lightly.
  • Bake for 30-35 minutes until golden.
  • Cool for at least 1 hour before slicing.
  • Sprinkle a little powdered sugar on top if desired.
