
This recipe will give you a taste of lemon with a hint of lime. As always, you can adjust the lemon and the lime juice to suit your taste.
Crust
- 1 cup flour
- ½ cup butter or margarine, melted
- ¼ cup powdered sugar
Filling
- 2 eggs
- 1 cup sugar
- 2 tbsp lemon juice
- 1 tbsp lime juice*
- 2 tbsp flour
- ½ tsp baking powder
Preheat oven to 350*.
Line an 8x8 inch pan with no stick foil.
Mix ingredients for crust.
Press crust into lined pan.
Bake for 15 minutes.
Mix remaining ingredients . Pour over crust.
Bake for 20 minutes. Test to be sure squares are cooked through. If not, cook for 3 more minutes until cooked.
Cool and sprinkle with powdered sugar.
* You can make these lemon squares by taking out the lime juice and adding 3 tbsp of lemon juice.
