Serve some yummy lemon herb roasted potatoes at your next brunch, potluck, picnic or church function. These potatoes are placed in a marinade of chicken broth, lemon juice, garlic and oregano; the flavor is amazing! Lemon is traditional when it comes to spring and summer after all. I garnished mine with some fresh parsley for added flavor and prettiness! Recipe size can be cut down for a smaller crowd.

What You Need:

(Makes: about 12 servings)

3 pounds of red potatoes, cut in half or quartered depending on size

3 cups of chicken broth

1/2 cup of fresh lemon juice

1/3 cup of olive oil

3 teaspoon of dried oregano

1 teaspoon of black pepper

4 teaspoon of garlic, minced

1/4 cup of fresh parsley, chopped

What to Do:

STEP 1) Preheat the oven to 450 degrees. Place the cubed potatoes in a 9x13 pan (foil pan recommended).

STEP 2) In a large bowl mix together the chicken broth, lemon juice, olive oil, oregano, pepper and garlic. Pour over potatoes.

STEP 3) Bake potatoes uncovered for 1 & 1/4 to 1 & 1/2 hours stirring every 20 minutes as they bake. Add more liquid if needed. Liquid will evaporate the final 20 minutes or so; be sure to stir so they don't burn. Garnish with fresh parsley & serve.
