I call these my Triple Lemon Whammy cupcakes because they take full advantage of vibrant citrus flavor. A healthy dollop of strawberry jam in the frosting along fresh strawberries really puts this dessert over the top!
What You Need:
(Makes: 2 dozen or 24 cupcakes)
1 package of white cake mix (regular size)
1/4 cup of lemon curd
3 tablespoons of lemon juice
3 teaspoons of grated lemon peel
1/2 cup of butter, softened
3 & 1/2 cups of confectioners' sugar
1/4 cup of seedless strawberry jam
2 tablespoons of milk
1 cup of sliced fresh strawberries
What to Do:
STEP 1) Line 24 muffin cups with paper liners. Prepare the cake mix batter according to package directions, decreasing water by 1 tablespoon and adding lemon curd, lemon juice and lemon peel before mixing batter.
STEP 2) Fill the prepared cups two-thirds full. Bake and cool cupcakes as package directs. Allow to cool completely.
STEP 3) Make the frosting: In a large bowl, beat the butter, confectioners' sugar, jam and milk until smooth. Frost the cupcakes; top with strawberries. Refrigerate leftovers.
