1 ¼ cups flour
1 ¼ cups rolled oats
½ tsp. and 1/8 tsp. salt
½ tsp. baking soda
½ cup sugar
½ cup brown sugar
¾ cup butter, unsalted, melted
1 tsp. vanilla
1 can sweetened condensed milk
1 tbsp. lemon zest
1/3 cup lemon juice
2 egg yolks
½ tsp. lemon extract

Preheat oven to 350º. In a bowl, combine flour, oats, salt, baking soda, and sugars. Make sure everything is well combined and has no lumps. In a small bowl, combine the butter and vanilla. Fold this into the dry mixture. It will have a crumbly texture. Grease an 8x8 baking dish and press half of the crumb mixture into the bottom of the dish. Bake for 15 minutes. *Leave the oven on

In a mixer, combine condensed milk, lemon zest, juice and extract, and egg yolks. Blend well. Pour into the baking dish evenly. Top with the rest of the crumb mixture and bake for another 25 minutes (or until golden brown). Once cooled, chill for 30 minutes covered. Cut into squares and serve. Enjoy your treat!
