These protein packed lemon granola bars evolved from our fist taste of Bear Naked's new cereal, Peak Flax Oats and Honey with blueberries. Hearty, delicious and healthy this new addition is a winner. It spoke lemon bars and breakfast to us. Rushing out the door to work on a weekday and off to kayak or climb a mountain on the weekends calls for a grab and go version of this special morning treat.
The staple of our recipe is a new granola which is free of processed sugars, artificial flavorings, trans fats and preservatives. The addition of flax seeds fill it with Omega 3 fatty acids. Blueberries add vitamin C and magnesium. Whole grain oats mean this cereal is loaded with fiber and sure to satisfy your morning hunger pains.
The combination of Peak Flax, dried fruits, nuts, bananas, eggs and soy protein powder combine to make a filling vitamin packed treat. The recipe is simple enough to put together. Store the cooled bars in a airtight container and you have breakfast on the go for a family.
- 2 cups Bear Naked Peak Flax
- 1 cup rice flakes or 3/4 cup wholewheat flour
- 2 tbsp soy protein powder
- 1/4 cupsunflower seeds
- 1/4 cup coconut, unsweetened is our preference
- 1/2 tsp sea salt
- 2 bananas mashed
- 1/3 cup dried blueberries or craisins
- 12 dry apricots, cut into small pieces
- 2 eggs, well beaten
- Juice and zest of one lemon
- 1 / 3 cup maple syrup
- 1/4 cup flax seeds
Preheat oven to 350 F. Grease a cookie sheet. Soak flax seeds in maple syrup and lemon juice. Mix together rice flakes, Bear Naked Peak Flax, soy protein powder, sunflower seeds, coconut, salt, lemon zest, and dry fruit. Set aside. In another bowl, combine eggs, lemon juice, maple syrup and flax seed mixture and mix well. Fold the liquid mixture and mashed bananas into in the rolled oats mixture and mix just enough to combine all ingredients. Press the preparation in the pan. Cook for 30 to 35 minutes or until lightly brown. Let cool, remove from pan and cut into bars.
