This recipe for shrimp and grits is lighter than my previous version of shrimp and grits.

Lemon and Garlic Shrimp and Parmesan Grits

1 cup quick cooking grits
salt and ground black pepper
1/4 cup parmesan cheese
3 tablespoons unsalted butter
24 oz raw shrimp, peeled and deveined
2 cloves garlic, minced
Dash of cayenne pepper (optional)
Juice of 1/2 lemon, plus wedges for serving
2 tablespoons chopped fresh parsley
