When the Super Bowl and the holidays are over everyone is deluged with leftovers. If you have lots of leftover meatballs, here’s a yummy recipe so you can enjoy them as a meal. Keep the sauce they are in as well, as the leftover sauce is part of this recipe, too.
It doesn’t matter if you have meatballs made from beef, chicken, ham or turkey. Any type of meatball will work for this recipe. The recipe is variable enough to make it with different types of sauces as well, so that each time you make this leftover meatball casserole it will be a whole new and delicious experience!
Leftover Meatball Casserole Recipe
Ingredients for Leftover Meatball Casserole:
- Meatballs, quartered – at least 3 - 4 cups worth (retain at least 1 ½ - 2 cups of sauce)
- 1 cup frozen corn
- 4 – 5 potatoes, unpeeled and thinly sliced
- ½ cup butter
- 1/4 cup flour
- 1 tsp. garlic powder
- 1 tsp. salt
- ½ tsp. pepper
- ¼ tsp. rosemary
- 1 cup cheese, shredded (Swiss, cheddar or cojack)
Directions for making Leftover Meatball Casserole:
Preheat the oven to 350 degrees. Lightly grease the bottoms and sides of a large casserole dish.
In the bottom of a large skillet, melt the butter over medium heat. Sprinkle the flour evenly over the melted butter, then sprinkle evenly with salt, pepper, garlic powder, and rosemary. Arrange sliced potatoes over the butter mixture, cover and keep on medium low heat for about 5 - 8 minutes (careful they don’t burn).
While the potatoes are cooking, arrange the meatball quarters in the bottom of the prepared casserole dish. If the meatballs have a sauce, put a little of the sauce over them. Sprinkle with the corn, cover, and put in the oven at 350 degrees for 20 minutes.
Every 5 minutes or so, turn the potatoes, sprinkling the other side with a little more salt and pepper. Once the potatoes are cooked and crispy on both sides, arrange them evenly over the top of the meatball and corn mixture. Sprinkle with cheese and return to the oven uncovered for at least 5 – 10 minutes or until the cheese is melted. Serve warm.
