Sure--just chop it up and put it through your food processor with onions and mayo! But this ham salad is going to be superb if you use the Big Six home-made mayonnaise as an ingredient, so consider making some up for this dish.
The mayo in the appetizers can also lay a foundation of oil in your stomach to help fend off intoxication, if you are going to be out and about for New Year's Eve.
If you have to make a decision, I recommend that Club Crackers in the multi-grain version, although you may prefer round shapes for appetizers. Club Crackers are very good, though. If you visit Safeway in Tucson you can find some very high-end crackers in their deli section as well. They live near the olives.
HAM SALAD SANDWICHES
2 cups of cooked ham, cut into chunks
1 small onion, roughly chopped
1/4 cup mayonnaise
1/2 cup sweet pickle relish
Multiply out these proportions if you have more ham or want to make more sandwiches. Any cooked ham will do for this recipe, but if you had a Christmas ham there is a good chance that you still have some.
Place all ingredients in a food processor and run the machine for a few moments to grind it evenly.
Spread the ham salad on slices of bread and top with another slice. The sandwiches may be garnished with lettuce or spinach leaves, tomatoes or other sandwich additions.
Just so you know, sweet pickle relish is now available sugar-free. I use it and it tastes just as good as any I ever bought.
