Have you been saddled last minute with preparing a family dinner for Easter and are looking for some recipe ideas that are delicious yet meat-free? Look no further then Veg Cooking’sEasy, Elegant Easter Dinner” menu (serves 6-8) which can be prepared either vegan (recommended by them), or vegetarian.


The menu includes a mustard and apricot-glazed faux ham (check out Whole Foods or Trader Joe’s for a soy-based ham), slow-cooked collard greens (a southern favorite minus the bacon fat), creamy mashed potatoes with chives, scorched carrots, and apple walnut cake. Not only will your taste buds be happy, but you will also be eating much healthier (that is, until you dig into the Cadbury eggs and Peeps in your Easter basket).
