Aging the heart of the rhum in used American whisky and bourbon barrels develops a dark mahogany color with a slight reddish tint.
This spirit carries the AOC mark of authenticity. Martinique is the only rum region designated as an Appellation d’Origine Contrôllée. This entails, as it does in France’s Cognac-making region, rigorous guidelines for harvesting, fermenting, and distillation.
The aroma carries hints of grassy sweet cane and smoky wood. Flavors of honey and dried fruits suggest a similarity to a fine cognac.
This aged rhum agricole is best enjoyed neat or on the rocks. It's also used in preparing the petit punch vieux, mixed with lime and cane syrup.
The La Favorite distillery at La Lementin, Martinique was built in 1843. The company uses two single-column copper stills which produce about 500,000 liters of rhum agricole annually. Paul Dormoy, grandson of Henri Dormoy, oversees the distillation, aging and bottling of La Favorite rhums at his distillery.
La Favorite also produces Rhum Agricole Blanc Coeur de Canne and Rhum Agricole Ambré Coeur de Ambré.
