Kraft hides cauliflower in their mac and cheese

Kraft just may succeed in getting your kids (or your spouse!) to eat cauliflower.  The Washington Post tells us that Kraft has introduced a new product that looks and tastes like the old product, but it has powdered cauliflower in it.  It is called, "Kraft Macaroni and Cheese Dinner, Veggie Pasta,"  and it sits proudly on the shelf alongside the original Kraft Macaroni and Cheese Dinner and the other versions available, such as organic and whole wheat.   A one cup serving of this veggie macaroni provides the equivalent of 1/2 serving of cauliflower.   
 
Hide or Seek?  Which is better? 
 
This is NOT 1/2 cup of cauliflower, but 1/2 serving.  And, if the whole point is to disguise it, your kids will still never learn to seek out vegetables for the pure enjoyment of eating them for a healthy life.  This writer tried one time to incorporate lima beans into brownies for my children.  While it was a culinary disaster, it has certainly become a humorous family memory!

A better way
 
In Northeast Tennessee the gardens are coming in, and, if you don't have a garden, Farmers Markets are open in almost any town in the region.  Downtown Bristol has a beautiful place to hold their Farmers Market on State Street, and you will find them open on Saturdays and Wednesdays.  Go to the Farmers Market in your town, buy some good old homegrown produce, and let your kids meet the farmer or gardener who grew the food.  Stop by the grocery store on the way home and buy some creamy ranch salad dressing.  Your kids will love dipping cucumbers, carrots, peppers, and, yes, cauliflower in the creamy dip.
