As promised, here are a few recipes that the kids can make. This will be a great way to include your children in a special Valentine's Day dinner.
Cheesy Pizza “Fundue
Ingredients: 1 cup spaghetti sauce
6 oz. Velveeta processed cheese, cut into ½ in. cubes
2 tbsp. 100% grated parmesan cheese
2 cups cut-up fresh vegetables, (celery, carrots, and red peppers)
4 slices Italian bread (1-in. thick) cut into 1-inch cubes.
Directions:
1. Place spaghetti sauce in medium microwavable bowl: cover; cover with paper. Microwave on high 1 minute.
2. Stir in Velveeta and parmesan cheese. Microwave 2 ½ minutes or until Velveeta is completely melted and mixture is well-blended, stirring after each minute. There should be an adult assisting as bowl may be hot.
3. Serve with vegetables and bread cubes as dippers.
Makes 4 servings
Dip “N” Roll Strawberries
Ingredients: 24 large fresh strawberries
1 cup semi-sweet chocolate morsels
1 tbsp. vegetable shortening
1 ½ cup Kellogg’s Rice Krispies cereal
Skewers
Directions:
1. Wash strawberries and pat dry with paper towel.
2. 2. In small microwave-safe bowl, combine morsels and shortening. Cook on high for 1 to 1 ½ minutes, or until melted, stirring every 30 seconds.
3. Place cereal in a shallow dish. Push skewers into berries through the stem end. Dip in chocolate, allowing excess to drip off. Roll in cereal. Place on wax paper. Let stand at room temp. Until chocolate is firm.
Chicken Pot Pie
Ingredient and Equipment:
2 cups frozen mixed vegetables
2 pkgs. (6-oz ea,) Oscar Mayer Oven Roasted Chicken Breast Cuts.
1 can (10 3/5 oz) condensed cream of chicken soup
½ cup Kraft shredded cheese
1 cup flour
2 tsp. callmet baking powder
½ cup Philadelphia cream cheese spread
¼ cup milk
½ cup and 1 cup dry measuring cups
1 cup liquid measuring cup
Measuring spoons and large spoon
2 med. Mixing bowls
4 each. 2-cup oven-proof bowl
Pastry blender and fork.
Directions:
1) Preheat oven to 400f. Measure all ingredients. Mix vegetables, chicken and soup in med. Bowl. Spoon evenly into 4 (2-cup) oven-proof bowls. (Most cereal bowls are suitable) Top with shredded cheese.
2) Mix flour and baking powder in med. Bowl. Cut in cream cheese spread with pastry blender or fork until mixture resembles coarse (pea-sized) crumbs.
3) Stir in milk with fork, just until dry ingredients are moistened.
4) Divide the dough into 4 balls. Pat out dough into 5-inch circles on lightly floured surface. Prick tops several times with fork to allow steam to escape.
5) Place dough on top of chicken mixture
6) Bake 25 – 30 minutes or until crust is golden brown.
Makes 4 servings, 1 pot pie each.
