Kid-friendly recipes: Quick & easy cinnamon-roasted almonds and cashews

We're back in the midst of football and fair-going season, soon to be followed by fall... all of which go perfectly with cinnamon-roasted almonds and/or cashews or any other nut really.

These are not only tasty and filled with nutrients but they make your house smell so great! Yes these are a sweet treat, but you know every ingredient in this snack, which makes it a much more healthful dessert or treat for kids than so many other things out there.

This is a recipe I've concocted on my own. I started out making cinnamon-roasted almonds with THIS recipe but wanted something quicker and easier. I also didn't want to use the oven to heat up the whole house or waste all that energy.

 Ingredients:

  • 1 cup Sugar* - you can use organic or all-natural or regular granulated sugar
  • 1/4 cup Powdered sugar*
  • 1/8 cup Cinnamon*
  • 4 cups Plain almonds, cashews or other nuts
  • Salt to taste - I like to use fresh ground sea salt

*In this recipe you can use more or less sugar and cinnamon to taste. The sweeter you want them, the more sugar you should use.

Directions:

  1. Heat up a non-stick skillet, add a single layer of nuts and allow to get warm.
  2. Sprinkle a portion of your sugar and cinnamon over nuts.
  3. Using a wooden spoon, continue to stir. Sugar will start to melt and combine with cinnamon and stick to your nuts.
  4. Once the nuts are coated, put them into a single layer on a dish or foil and sprinkle with powdered sugar and more cinnamon.
  5. Meantime, repeat steps 1-4 until you've coated all your nuts then pour all nuts back into skillet and repeat. Repeating gets more chunks of cinnamon-sugar to stick to the nuts for more sugary flavor.
  6. Allow to cool, then store in sealable container.

The whole process takes about 10-15 minutes and you only have one pan and a wooden spoon to clean up. If you soak those in water immediately, that's easy too!
