Starbucks is on basically every corner in Houston. Most young professionals who are addicted to coffee or over-priced treats have their favorite location. Getting a drink, whether coffee, espresso or tea, is usually expensive, but not over the top. Where Starbucks gets its extra dough is the inviting desserts staring at customers from the pristine glass.
In an effort to make muffins that are just as good and better for you than the treats you can buy with your latte, try Nigella Lawson’s chocolate chocolate-chip muffins. This easy recipe will cure one’s chocolate cravings and save your wallet some cash…for more coffee.
Grab a muffin tin, paper muffin cups, measuring cups, a large bowl and a smaller bowl. Preheat the oven to 400 degrees. Combine, in a large bowl:
- 1 3/4 cups all-purpose flour
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 2 tbs. best quality cocoa powder
- 3/4 cup superfine sugar and
- 3/4 cup semisweet chocolate chips.
Then, in the smaller bowl, combine:
- 1 cup milk
- 1/3 cup plus 2 teaspoons vegetable oil
- 1 egg and
- 1 tsp. pure vanilla extract.
Pour then wet ingredients into the dry. Mix the ingredients together only until everything is combined.
“A lumpy batter makes the best muffins,” Lawson said.
Then fill the muffin cups about 3/4 of the way full. Sprinkle 1/4 cup of chocolate for a nice topper. Bake the muffins for 20 minutes or until the muffins are dark, risen and springy. It may take less time to cook depending on your oven.
