Key Lime is reminiscent of setting foot on a far away island. Why not try this recipe for your next pool or tropical themed party? It's super moist and has just the right amount of key lime for a refreshing taste of the tropics.
If serving to adults, you may add a couple tablespoons of tequila to the powdered sugar/key lime juice blend that you pour over the cake after baking. If tequila is added to the dish, it is not suitable for children as the alcohol will not be cooked out.
Take a trip to the tropics with Key Lime Cake!
Key Lime Cake
- 1 1/3 c. sugar
- 5 eggs
- 1 1/3 c. vegetable oil
- 3 oz. pkg. of lime Jello
- 1 tsp. lemon juice
- 2 c. flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 2/3 tsp. salt
- 2 drops green food coloring
- 2/3 c. key lime juice, divided
- 1 c. powdered sugar
- 1 small container Cool Whip
Cream together with an electric mixer: sugar, eggs, oil, Jello, 1/3 cup key lime juice, and lemon juice.. Add flour, baking powder, baking soda, salt, and food coloring. Mix thoroughly. Place and bake in a 9x13 greased pan at 350 degrees for 25 - 30 minutes. Cool for 15 minutes. While cake is cooling mix remaining 1/3 c. key lime juice with powdered sugar (this is where you would add the tequila if you choose to do so). Prick cake with fork. Drizzle powdered sugar mixture over cake. Frost with Cool Whip. Refrigerate until ready to serve.

Key limes are more tart than regular limes and are smaller in size. You may use regular limes if key limes are not available.
