Kentucky biscuits, transparent squash, and Pecan Pie done the Colonel's way

This week there was a private estate sale in Yakima where the writer of this article found an old (before zip codes) book, "Tourist Edition," of Eat and Be Merry, no copyrightThe back cover features an advertisement of Harman's Restaurant in Yakima which was at 40th and Summitview, 22 Westpark Shopping Center.

The spiral-bound book is filled with little stories, anecdotes, corny jokes which are (some of them) actually funny, and poems.  At the end Eat and Be Merry are favorite recipes of Col. Harland Sanders (1890-1980), originator of the Kentucky fried chicken recipe.  Below are three recipes selected from the book as finely suited for the Thanksgiving season.

Col. Sanders' Pecan Pie

  • 4 eggs, slightly beaten
  • 1 C Golden Karo
  • 1/3 C sugar
  • pinch salt
  • 1 T lemon juice or vinegar
  • 4 T butter
  • 2 t vanilla

Mix all ingredients together thoroughly.  Pour into an unbaked pie shell that has had 2/3 C pecan halves spread across the bottom added.  Bake 35 minutes at 325 to 350 degrees.

Col. Sanders' Transparent Squash

  • 3 C Acorn squash or Hubbard squash (either one)
  • 1 T mace
  • 1/2 C sugar
  • 1/3 C melted butter
  • 2 C water
  • pinch salt

Cut the squash in cubes about 3/4" or 1" in size.  Then sprinkle on the mace and salt.  Add sugar, butter, and water, which should completely cover the squash.  Then simmer slowly until the squash appears transparent and has taken in the butter and sugar.

Col. Sanders' "Kentucky" Biscuits

  • 1 1/2 C flour (before sifting)
  • 1 1/2 T salt
  • 1 T sugar
  • 1 T baking powder

Sift above into mixing bowl. Nest the flour, add most of 1 C milk (sweet), put in lard or shortening the size of a large egg. Begin squeezing the lard and flour in the milk until thoroughly mixed, add rest of milk if needed and mix.  Turn onto floured board, kneed until consistency desired, cut into biscuits. Makes 13. (Use Standard Measuring Cup and Spoon--Level Measurements) 

Other interesting recipes in the book include Col. Sanders' "butter thin" pancakes, French Fried parsnips or cauliflower, Chess pie, Lemon sponge pie, a couple of dressings, Old-fashioned overnite buckwheat cakes, Carrot-almond ring, and Cream of tomato soup.
