6 – 8 servings.

Step 1 - Combine the following ingredients in a deep skillet or pot:

A Few tablespoons olive oil

4 chopped garlic cloves

2 - diced onions (red, yellow, or white)

1 - Fresh Jalapeño pepper - minced optional.  (Special note - be sure to remove the seeds first and discard - they are dangerously hot) *You can also leave the hot peppers out of the main dish and serve them minced on the side for those who like their Chili spicy and hot!

Cook all of the ingredients together until onions are clear.

Step 2 - Add 2 pounds lean ground turkey (Vegetarians can substitute their favorite brand of "meatless crumbles.")

Break up meat with spatula; stirring frequently until all the meat is cooked, consistency should be crumbly.  Drain any remaining fat, and then proceed to Step 3 below:

Step 3 - Add in the following ingredients:

2 can Red Kidney Bean, or Black Beans (any variety)

½ cup water or ½ jar tomato sauce (any low salt variety)

2 - cans diced tomatoes, drained, any low salt variety

Stir frequently to be sure all ingredients are mixed well.  Once the dish is heated through and the chili starts bubbling - serve hot in bowls.

Set up a fun "Garnish Bar" offering guests the ability to top off their Chile bowl with chopped tomatoes, red onions, avocado, fresh chopped cilantro, shredded cheddar cheese etc.

For a quick and easy lower fat dessert make The Party Girl Diet's Super Skinny Fudge!

For a fun, easy to clean up twist - you can serve The Party Girl Diet's Firehouse Chili in Taco Salad Bowl shells, or ladle into (light) cornbread muffins that have had the middle scooped out!
