Kale should be awarded "Vegetable of the Year"

Almost out of nowhere, kale has crept into the news, our grocery stores and onto our dinner plates. This vegetable has amassed an amazing following in 2012 and therefore, it is now unofficially being awarded "Vegetable of the Year."

Kale is a green leafy vegetable that is actually a form of cabbage although it looks like a close relative to spinach. Kale is a nutrient powerhouse. It is high in beta-carotene, vitamins K and C, and is rich in calcium and protein. It is known to boost DNA cell repair and appears to have some anti-cancer properties, too.

You can eat kale at each meal if you wanted to do so. You could eat kale in a stir-fry for dinner, with your eggs at breakfast, or as a snack, dried in the form of "kale chips." The list is endless and the internet is teaming with suggestions and mouth-watering recipes.

However you enjoy kale, just enjoy it. It will help keep your insides functioning right and you feeling great. Now, looking forward to 2013, what vegetable do you think will win top honors and why?
