Just another Meatless Monday...

It's that time of year again! New Year's Resolutions ... insert groan.

I never used to make New Year's Resolutions because I am a realistic person and I know that I will never follow through. However, the past 2 years I have been trying to make resolutions that I can actually handle. I won't bore you with all of them because I doubt anybody cares about the fact that I am going to start taking more Vitamin D3 because the winter and lack of sunshine is making me have whatever that stupid syndrome is.

My one interesting resolution is... MEATLESS MONDAY!!!

Oh yes, not the most original idea but the concept of not having meat for one entire day did trouble me at first. I don't understand how people do it full time because this girl loves a chicken quesadilla.

However, now that I have decided to not eat meat on Monday's, I have become obsessed with finding alternatives, besides a salad. I feel like eating a salad is just a cop out. I WILL be more creative than that.

My first Meatless Monday did sort of fall flat. I had big intentions of making a beautiful, delicious meal and got tuckered out from the day and ended up eating a baked potato and cheese pizza for dinner. BORING!

I know, I am sorry. I am still impressed that I actually pulled through with no meat considering I woke up craving sausage but I resisted so I need to get some points for willpower right.

Next week, I am hoping to have a great success story to share with everybody. I am shooting for making a delicious and beautiful portobello mushroom burger so wish me luck!
