After experimenting with different ratios, Bob says that you should plan meals that consist of 40% healthy carbs, 40% lean protein and 20% healthy fats. He feels that this ratio provides you with optimal nutrition while boosting your weight loss. A former vegetarian, Bob has created recipes for his book that follow those rules. He emphasizes that you do need healthy fats to balance your diet, and that your carbohydrates should come primarily from vegetable sources. Quinoa Rancheros Ingredients
- Olive oil spray
- 3 cups chopped fresh spinach
- 5 egg whites
- 1/2 cup pico de gallo
- 1/3 cup cooked quinoa
- 1/4 avocado, sliced
Heat medium skillet over medium-high heat. Spray the hot pan with olive oil. Add the spinach and cook until wilted. Set aside on paper towel to absorb the liquid.
Re-spray pan and scramble the egg whites. Toss in the salsa and spinach to heat through. Place on top of the quinoa. Add avocado and enjoy.
