
Red, white and blue mixed berry tart
America's favorite summer holiday is almost upon us. Independence day is the celebration of freedom marked by festive gatherings of friends and family for parades, picnics, barbecues and spectacular fireworks displays. Our proud display of the American flag is a symbol of patriotism and support for our country. The colors of the flag have special meaning: red is for hardiness and valor, white stands for purity and courage, and blue is for vigilance, perseverance and justice. It is especially appropriate that the vibrant colors of this dessert represent the characteristics of those who fought to give us the freedom and Independence we enjoy today.
Red, white and blue mixed berry tart
Ingredients:
- 1 ready bake Pillsbury pie crust
- 8 ounces mascarpone cheese
- 1/3 cup heavy whipping cream
- 1/4 cup sugar
- 1/2 teaspoon pure vanilla extract
- 1 teaspoon fresh grated orange zest
- 1 1/2 cup sliced strawberries
- 1 cup fresh blueberries
- 1 cup fresh blackberries
- 1 cup fresh raspberries
- 2 tablespoons seedless raspberry jam
Preparation:
Preheat oven to 425 degrees.
Bring Pillsbury ready bake pie crust to room temperature. Remove crust from package, place on a lightly floured surface and roll into a 12 inch circle. Carefully place crust into a buttered 9 inch tart pan with a removable bottom. Fold excess crust downwards and press gently into the fluted sides of the pan making sure all edges are even. Generously prick bottom of the crust all over with a fork to prevent puffing and cracking. Bake for 10-12 minutes or until the crust is lightly browned. Cool completely on a wire rack before filling.
Combine mascarpone cheese, heavy cream, sugar, vanilla and orange zest in a medium sized bowl. Beat with a hand mixer until stiff peaks form. Spread mixture into the prepared crust. Arrange strawberries around the outer edges of the tart. Mix remaining berries in a bowl and spoon into the center of the tart. Heat seedless raspberry jam in a small pan over low heat until melted and smooth. Cool and drizzle generously over berries. Cover and refrigerate for 1 hour before serving.
Remove sides and bottom of tart pan prior to placing on a decorative platter. Serve alone or with a scoop of vanilla ice cream, add a generous dollop of cool whip or a squirt of whipped cream.
